ALMOND BUTTER SWIRLED BROWNIES

ALMOND BUTTER SWIRLED BROWNIES

MAKES 25 SMALL OR 16 LARGER BROWNIES

• 200g unsalted butter

• 200g dark chocolate

• 250g caster sugar

• 3 medium eggs, beaten

• ½ tsp vanilla bean paste

• Pinch of salt

• 100g plain flour

• 100g salted almond butter (or use unsalted almond butter and add salt)

You will need

• A 20x20cm brownie tin

The best brownies aren’t made with sweet potato, cauliflower, aubergine or whatever fresh hell people come up with next. If you have a brownie craving, those things just won’t satisfy you. What you really need are these. They have chocolate, sugar, gluten . . . the works.

Preheat the oven to 160˚C /180˚C conventional/ gas mark 3.

Melt the butter and chocolate together in the microwave or in a heatproof bowl over a saucepan of gently simmering water.

Stir in the sugar, eggs, vanilla bean paste and salt. Stir in the flour.

Line the brownie tin with baking paper and pour in the mixture.

Dollop over the almond butter and swirl the mixture together.

Bake in the oven for around 35 minutes, until just baked and super gooey.

Leave to cool for 15 minutes before cutting into squares.

TIP Not a fan of almond butter? Substitute your favourite nut butter or just leave it out entirely. Only have a loaf tin? Simply halve the mixture or bake in two batches
