Single-Serve Baked Egg Pots

SERVINGS: 2

HANDS-ON TIME: 5 minutes
OVERALL TIME: 15 minutes

1 cup (60 g/2.1 oz) fresh spinach
2 teaspoons (10 ml) extra-virgin olive oil
2 large eggs
2 ounces (57 g) diced Spanish chorizo
1/3 cup (50 g/1.8 oz) crumbled feta cheese
4 pieces (50 g/1.8 oz) cherry tomatoes, halved
Black pepper or red pepper flakes, to taste

Preheat the oven to 430°F (220°C) forced fan or 465°F (240°C)
conventional.

Place the spinach in two 12-ounce (360 ml) ramekins or mugs. Drizzle each with a teaspoon of the olive oil. Crack an egg into each ramekin. Top with the chorizo, feta, and tomatoes. Place the ramekin in the oven and bake for 10 to 12 minutes, until the whites are set and the yolks are still runny. Season to taste and eat immediately.

TIPS:
• No time to cook? Use a microwave to cook for 1 to 2 minutes, until the
whites are set.
• Swap the fresh spinach for frozen, thawed, and drained spinach. You
can also use kale, collards, or chard.
• Swap the feta for soft goat’s cheese or even grated Cheddar.
• Swap the Spanish chorizo for pepperoni, smoked salmon, sardines, or cooked diced chicken.
