Chipotle Chicken Skewers with Chopped Salad

Marinating chicken makes the meat juicy, tender, and full of flavor. It’s simple and ideal for busy weeknights and healthy lunch boxes. Here it’s served with a simple chopped salad. I used homemade Mexican chile paste. If you use store-bought, be sure to watch out for added sugar!

MARINATED CHICKEN
1.3 pounds (600 g) chicken breasts, cut into 11/2-inch (4 cm) chunks
3 tablespoons (45 g/1.6 oz) chipotle chile paste or minced chipotle peppers in adobo (see tip)
1/4 cup (60 ml) extra-virgin olive oil
1 tablespoon (15 ml) fresh lime juice
1/4–1/2 teaspoon salt

EASY CHOPPED SALAD
1/4 cup (60 ml) extra-virgin olive oil
1 tablespoon (15 ml) fresh lime juice
1 large (250 g/8.8 oz) cucumber, diced
1 large (200 g/7.1 oz) avocado, diced
1/2 medium (50 g/1.8 oz) red onion, diced
2 large (250 g/8.8 oz) tomatoes, diced
1/4 cup (15 g/0.5 oz) chopped cilantro or parsley
Salt and pepper, to taste

TO MARINATE THE CHICKEN: Place the chicken chunks in a bowl. Add the chile paste, olive oil, lime juice, and salt. Mix until combined and marinate in the fridge for at least 1 hour or up to 24 hours. When you’re ready to cook, line a baking sheet with aluminum foil and place a rack on top. Thread metal or soaked wooden skewers with the chicken chunks, 4 per skewer.

Preheat the oven to 430°F (220°C) forced fan or 465°F (240°C) conventional. Bake for 12 to 15 minutes, turning them halfway through and brushing with any leftover marinade from the bowl. When done, place on a cooling rack.

MEANWHILE, PREPARE THE SALSA: In a small bowl, whisk the olive oil and lime juice. Place the veggies in a mixing bowl. Pour the dressing over and mix to combine.

Serve with the skewers (about 1 cup/200 g/7.1 oz of salad with 2 skewers per serving).
