A comprehensive cook book for Pritikin adherents: appetizing, unusual dishes that aren't oppressively complicated. Roth is a trained chef who successfully treated her husband's health problems with the diet, then became head of Pritikin's cooking school. For more healthy eating, she begins: avoid salt, avoid fat and cholesterol, avoid sugar, eat a diet high in complex carbohydrates and fiber, and maintain an individualized ideal weight. The recipes that follow list the calorie count and the content of 20 essential nutrients, plus fiber, for each dish - so readers can make further adjustments according to their needs and tastes. A sample menu for a springtime dinner includes chicken paprikash, zucchini with linguini, gingered cucumbers, and strawberry chiffon pie - hardly the spartan menu that many envision as Pritikin-based. Recipes are grouped as Appetizers, Soups, Salads, Entrees (red meat is included, but rarely), Casseroles, Vegetables, Pastas and Grains, Sweets, and Miscellaneous (chutney, hummus, pizza).
