Slow Food Editore, the publishing arm of the Slow Food Movement, came into being in 1989. All the company's publications are inspired by the philosophy of the pleasure of wine, food and conviviality and every year it publishes "Osterie d'Italia", a guide to Italy's finest traditional restaurants. This book is a collection of recipes from those Osterias, originally published in Italian. It offers over 600 recipes from every region of the country. Italy is distinguished by its regional, historical and cultural differences and nowhere are the divisions more pronounced than in their dishes and local specialities.
