Tantalising Recipes from the BBQ and Grill

We’re going to be sharing two of our favourite recipes from Finger Food from the BBQ and Grill this June….so fire up your BBQ and get ready!  Today, it’s Chicken Breast Skewers.

CHICKEN BREAST SKEWERS

Makes 8 Cooking time: 1 hour 10 minutes

Ingredients:

8 chicken drumsticks

2 tbsp butter

1 clove garlic

2 tbsp olive oil

Salt, freshly ground pepper

50 g butter

60 g honey

2 tsp sriracha (hot chilli) sauce

1 tbsp soy sauce

2 tsp lime juice

1. Scrape around the bone of the lower part of the drumsticks and push the flesh and skin up, freeing more of the bone. Put them into a bowl.

2. Pre-heat the barbecue to 200 °C. Melt the butter, and peel and chop the garlic. Combine the butter with the garlic in a small bowl, and stir in the oil, 1 teaspoon salt and ½ teaspoon pepper. Coat the drumsticks with the mixture, rubbing well. Cook the drumsticks indirectly in the barbecue for 45–50 minutes, until crispy.

3. In the meantime, make the glaze. Melt the butter in a saucepan. Stir in the other ingredients and bring to the boil. Glaze the drumsticks with the sauce during their last 5 minutes of cooking time.
