Our Second Recipe From KETO Simple – Zucchini Gratin

Zucchini Gratin

Baked zucchini in creamy cheese sauce with no thickeners and no potatoes! This is also easy to scale up or down and so you can even serve it as a main dish. For extra protein, add some crisp bacon or cooked chicken.

½ cup (120 ml) heavy whipping cream
¼ cup (57 g/2 oz) unsalted butter
1 cup (240 g/8.5 oz) cream cheese
½ teaspoon onion powder
½ teaspoon garlic powder
2 cups (227 g/8 oz) grated Cheddar cheese, divided
¼ cup (15 g/0.5 oz) chopped herbs such as parsley, thyme, and chives, or 2–3 teaspoons (2–3 g) dried Italian herbs
Salt and pepper, to taste
4 medium (800 g/1.8 lb.) zucchini

Place the cream and butter in a small saucepan and gently heat it up. Add the cream cheese, stir until melted, and bring to a simmer. Once you see bubbles, take it off the heat. Add the onion powder, garlicpowder, and 1 cup (113 g/4 oz) of Cheddar and mix until smooth and
creamy. Stir in the herbs. Taste and season if needed.

Preheat the oven to 340°F (170°C) forced fan or 375°F (190°C)conventional. Cut the zucchini into about ½-inch (1 cm) thick round slices.

Place a layer of zucchini in a baking dish large enough for the zucchini and about 2 cups (480 ml) of cheese sauce. Pour some of the cheese sauce over the zucchini and repeat for the remaining zucchini and cheese sauce. Finally, sprinkle the top with the remaining 1 cup
(113 g/4 oz) of Cheddar cheese.

Bake for 35 to 40 minutes, or until bubbly and golden on top. Serve warm, or let it cool down and refrigerate for up to 5 days.

TIP:
Apart from adding different herbs and spices, you can use different types of cheese. Try swapping cream cheese for soft goat’s cheese, orgrated Cheddar for Swiss cheese or sheep’s cheese
