Loaded Notato Soup

This creamy soup is the ultimate comfort food! It’s a great one-pot meal that doesn’t require too much preparation. Serve with cheese and crispy bacon on top, and some keto bread (page 67).
2 tablespoons (30 ml) ghee, duck fat, or lard, divided
1 small (70 g/2.5 oz) yellow onion, diced
2 cloves garlic, minced
1 small (450 g/1 lb.) cauliflower, chopped
4 cups (960 ml) beef or chicken stock
3/4 cup (180 ml) heavy whipping cream
3/4 cup (170 g/6 oz) sour cream
1-1/2 cups (170 g/6 oz) shredded Cheddar cheese, divided
3 medium (45 g/1.5 oz) spring onions, sliced
Salt and pepper, to taste
6 slices (96 g/3.4 oz) crispy bacon (see page 14), crumbled
Heat a large pot greased with ghee over medium-high heat. Add the onion and cook for 5 minutes, until lightly golden. Add the garlic and cauliflower and cook for 1 minute. Pour in the stock and bring to a boil. Reduce the heat to low and cover with a lid. Cook for 8 to 10 minutes,
until the cauliflower is tender. Add the cream and sour cream. Heat through and then take off the heat.
Ladle about half of the soup with 1 cup (113 g/4 oz) of the Cheddar into a blender or use an immersion blender. Process until smooth and creamy. Pour back into the pot and add half of the spring onions. Season with salt and pepper. Serve with crispy bacon pieces, the remaining 1/2 cup (56 g/ 2 oz) Cheddar cheese, and the remaining spring onions. Once cooled, store in a sealed jar in the fridge for up to 4 days.
