Creamed Spinach Chicken Skillet

Creamed spinach is the perfect keto side. Simply top with cooked chicken and you’ve got a delicious one-pot meal in just twenty minutes. This recipe makes two servings so you can have one for dinner and pack the rest for the next day’s lunch!

1 tablespoon (15 ml) ghee or duck fat
2 medium (300 g/10.6 oz) chicken breasts, skinless and boneless (150 g/5.3 oz each)
1/2 cup (120 ml) heavy whipping cream
10.6 ounces (300 g) frozen spinach, thawed and squeezed dry (weight excludes water squeezed out)
Optional: pinch of nutmeg
Pinch of salt and pepper
4 tablespoons (20 g/0.8 oz) grated Parmesan cheese, divided
1 medium (15 g/0.5 oz) spring onion, sliced
Optional: fresh herbs of choice

Heat a large skillet greased with ghee over medium-high heat. Once hot, add the chicken, skin-side down. Cook undisturbed for 5 to 8 minutes. Rotate the pan halfway through to ensure even cooking. Then flip the chicken over and cook for another 5 to 8 minutes. The exact time depends on the thickness. The chicken is done when an instant-read thermometer inserted into the thickest part of the breast reads 165°F (75°C). Remove from the pan and place on a chopping board. Leave to cool slightly and then slice.

Place the cream in the pan where you cooked the chicken. Add the drained spinach. Add a pinch of nutmeg (if using), salt, and pepper. Gently heat until it begins to simmer and cook to thicken for 1 minute. Then mix in 3 tablespoons (15 g/0.5 oz) of the Parmesan. Top with the sliced cooked chicken breasts and sprinkle with the remaining 1 tablespoon (5 g) Parmesan. Serve warm sprinkled with the spring onion or herbs of choice. Store in the fridge for up to 4 days.

TIP:
Instead of 1/2 cup (120 ml) heavy whipping cream you can use 1/4 cup (60 g/2.1 oz) mascarpone or full-fat cream cheese.
